The 2012 weather has been hallmarked by many as very challenging but has created some stunning Champagne. Relatively low yields due to various weather conditions throughout the year. The winter months brought some frosts and hail which damaged the early stages of bud burst. August and September were very warm and this helped rescue and give the grapes a stunning maturity. Salmon pink hue with golden tints. The bouquer is poised and remarkably elegant, its subtle, fleeting aromas are delicate and complex. A zesty fresh nose with precise notes of citrus peel and raspberry. Toasted notes and almonds on the palate with fresh fruit, chalkiness and more zest. A long and enticing finish.
Serve at 8-10 °C with shrimp, halibut fillet steak seasoned with forest mushrooms and mashed potatoes, spicy chicken dishes.
