Raudonasis sausas
Slope of limestone marl in the Brézème vineyard, facing south. Syrah from a cold climate from 20 to 40 years old vines. The balance is tense, with acidity and tannin in youth that softens with time. Maceration of whole-clusters for 6 to 8 days. Fermented by indigenous yeasts in open concrete tanks. No use of sulfur before bottling. Aged in concrete tanks on its fine lees for 18 to 24 months. Bottled without fining or filtration.
Serve at 16-18 °C with both rustic and sophisticated dishes, stews, braises, and grilled meats, dark fish and tomato-based dishes such as ratatouille.
Becoming a winegrower is the great adventure that began for Eric 20 years ago; a dream for those who have no family background in vineyards or wine but are just passionate wine lovers. Step by step, he have created a 12-hectare estate today in the appellation of Brézème located in the northern Rhône and in the Ardèche just next door, in the Ouvèze valley. His approach and philosophy are born from personal journeys, readings, meetings with emblematic winemakers around the world and unconventional farmers.
