Chenin Blanc has a superb reputation this sparkling wine in the classic tradition is no exception. Made by the Cap Classique or traditional method, this wine was aged for 28 months on lees to develop creaminess and delicate mousse while still maintaining bright, fresh apple, pear and quince aromas.
Serve at 6-8 °C as an aperitif, with oysters, seafood, soft fish dishes or soft cheeses, chicken made in cream sauce.
"Our idea was simple - to create the best wine. We didn't have anything to show for the first four or five years," says Ken Forrester.
