An exceptionally elegant and precise white Burgundy, originating from the unique, single "En Virondot" vineyard. This Premier Cru vineyard is located at the highest point of the Chassagne appellation, dominated by limestone-rich soils.

In the glass, the wine showcases a perfect balance between body and aromas. The nose reveals a highly structured profile, dominated by aromas of ripe stone fruits (white peaches, nectarines) and citrus fruits, accompanied by subtle white flowers and light oak spice notes. On the palate, the wine presents a complex texture without being heavy. The necessary freshness and energy are provided by an expressive, crisp mineral acidity. Everything is crowned by a long, complex, and elegant finish.

The grapes used for this wine ripen on approximately 30-year-old ‘Chardonnay’ vines, growing in limestone-rich soil directly responsible for the wine's pronounced minerality. The winery employs a highly deliberate production method to preserve the purity of the grapes: the majority (about 70%) of the juice is fermented in temperature-controlled stainless steel tanks, while the remaining portion (about 30%) is fermented in new French oak barrels.

The lees are kept in the barrels until the end of malolactic fermentation, granting the wine additional creaminess. The aging duration depends on the specific vintage, but the maximum time reaches 12 months in oak barrels, followed by an additional 3 months in stainless steel tanks, before the wine is bottled.

Serving recommendations

We recommend serving it chilled to a temperature of 12–14 °C. Thanks to its structure and minerality, this Chardonnay pairs perfectly with oysters, lobster, richer white fish, poultry dishes with creamy sauces, and classic goat or sheep’s milk cheeses.
