The soil, very marly at this point, is well suited to Chardonnay. It is located between 360 and 380m altitude, on the Pernand marls. This geological level, which can be found in Pernand-Vergelesses and the hill of Corton, explains the resemblance with the wines of these finages, the altitude bringing a little more freshness. The wines complete their fermentation slowly in barrels at cellar temperature. The proportion of new oak amounts to about 20%. A stirring of the lees is done at the same time as the topping up of the barrels (every 10 days on average), until the end of the malolactic fermentation.
Serve at 12-14 °C with grilled tuna, gently prepared poultry, semi-hard cheeses.
