Raudonasis sausas
This wine comes from Syrah from 70+ year old vines, locally known as «Serine». Whole-cluster maceration for 8 to 10 days. Fermented by indigenous yeasts in wooden vats. No use of sulfur before bottling. Aged in foudres on its fine lees for 36 to 48 months. Bottling without fining or filtration. Depending on the vintage, the wine may or may not see any additions of sulfur.
Serve at 16-18 °C with both rustic and sophisticated dishes, stews, braises, and grilled meats, dark fish and tomato-based dishes such as ratatouille.

Step by step, he have created a 12-hectare estate today in the appellation of Brézème located in the northern Rhône and in the Ardèche just next door, in the Ouvèze valley. His approach and philosophy are born from personal journeys, readings, meetings with emblematic winemakers around the world and unconventional farmers.
