Production method and climate
Champagne is made using a specific method called the “traditional method” or “method champenoise”, where secondary fermentation occurs in the bottle, creating the characteristic bubbles. During the process the wine is aged on the lees that creates aromas of brioche, cookies and bread сrust. The minimum time of ageing is 12 months according to regional legislation.
