What is grappa and its production secrets

This is an exclusively Italian beverage whose production technology allows for the secondary use of valuable raw materials left over from winemaking, turning them into a highly noble distillate.

Production process and grape pomace

This spirit is made by distilling grape pomace (skins, seeds, and stems) that remains after pressing the juice for wine. It is precisely in the pomace that the most intense grape aromas hide. A quality result depends on the freshness of the raw material and the mastery of the distiller—the process must be done very gently to preserve the essential oils and fragrances to the maximum.

"Poli" – the benchmark of Italian craftsmanship

When discussing top-tier quality, it is impossible not to mention the Poli distillery located in the Veneto region. It is a historic, family-run company that has been producing grappa since 1898. Their stills are among the oldest in Italy, and every bottle reflects incredible attention to detail, passion, and a deep respect for the raw material. Young (Giovane) and Aromatic (Aromatica)

Young grappa is clear and unaged in oak barrels, so it features a very pure, straightforward, and refreshing aroma of grapes and white flowers. The aromatic version is made from highly expressive grape varieties, such as Moscato or Gewürztraminer, and delights with intense, sweet scents.

Oak-aged (Affinata, Invecchiata, Riserva)
