Sarpa di Poli is a young grappa, created as a bridge between the past and the future. The idea was born in 1983, when Jacopo Poli set out to craft a spirit that would preserve the aromas of traditional grappa, yet avoid the “old-fashioned” flaws: harshness, aggressiveness, and a heavy, oily feel. The goal was clear: an authentic, sincere, classic grappa with true character, while maintaining elegance.

After a long search for the right raw material, the choice naturally turned to a timeless Bordeaux-style blend of grape varieties: ‘Cabernet Franc’, ‘Cabernet Sauvignon’, and ‘Merlot’. These grapes have been successfully grown in the Veneto region for many years, making them a fitting base for the family’s symbolic grappa, meant to capture experience and passion in one clear, recognizable style. It is artisanally distilled in small batches, using a discontinuous copper still heated by steam, to extract aromas with precision and purity.

On the nose, Sarpa di Poli is firm, almost rustic, with a pleasantly grassy freshness reminiscent of freshly cut grass. It then opens into vinous notes, red berries, and hints of red flowers—geranium, rose, and violet—bringing a softer elegance to its classic structure. On the palate, the grappa is dry and energetic, with a clear structure, a distinctive grape marc character, and a clean, lingering finish.

We recommend serving it at 10–15 °C in a tulip-shaped glass, so the aromas unfold precisely, without excessive alcoholic sharpness. This is a grappa best enjoyed as an after-dinner digestif, especially alongside hard cheeses or nuts, when you want a firm, authentic accent.
