Although many consider it a modern trend, it is actually one of the oldest methods of making sparkling wine in the world, predating the discovery of the Champagne production technique by centuries.
This beverage is born through a single, continuous fermentation. The wine is bottled before the first fermentation has finished. As a result, the natural grape juice and yeast continue to work inside the bottle, creating gentle bubbles without any added sugar or additional yeast.
Most of these wines are unfiltered, which means natural yeast lees often remain in the bottle. Because of this, the drink can appear slightly cloudy in the glass—this is completely natural and even desirable. It is usually sealed with a simple metal crown cap, emphasizing the wine's informality, simplicity, and naturalness.
Thanks to its generally lower alcohol content, exceptionally crisp acidity, and energetic fruitiness, this is a highly food-friendly wine.

Champagne is made using the traditional method, where additional sugar and yeast (Liqueur de tirage) are added to an already finished still wine to induce a second fermentation in the bottle. Pet-Nat finishes its first and only fermentation inside the bottle. Therefore, its bubbles (carbonation) are often softer, and the taste itself is more "wild," unpredictable, and closer to the original profile of the grape juice.
Before opening, the bottle must be chilled very well (to 6–8°C). Since the beverage is "alive" and the pressure inside can sometimes be unpredictable, open it carefully, ideally with a glass ready nearby. It is perfectly served in universal white wine glasses.
