What defines true Calvados?

While many types of apple brandy are produced worldwide, true Calvados can only be called such if it is produced within the strictly defined zones of Normandy (AOC). Hundreds of different apple varieties—classified as sweet, bitter, and acidic—are used to create the perfect flavor balance. The most prestigious sub-region is Pays d’Auge, famous for its double distillation and highly complex spirits.

Age Classification: How to choose?

Similar to Cognac, Calvados is classified according to the age of the youngest spirit in the blend:

  • Fine / V.S. – aged for at least two years. Dominated by fresh apple aromas, lightness, and crispness.
  • Vieux / Réserve – aged for at least three years. The flavor becomes deeper, with light woody notes appearing.
  • V.S.O.P. / Vieille Réserve – aged for at least four years. Well-balanced, with hints of vanilla and baked apples.
  • X.O. / Hors d’Age – aged for six years or more. These are luxurious creations smelling of honey, nuts, and spices.
