The name originates from two words: "Cor" (heart) and "Pinnat" (the historical name of the Penedès region). It is a relatively new but globally acclaimed brand that unites the region's best producers dedicated to crafting only the highest level of production.
To use this name on the bottle, winemakers must adhere to extremely strict rules. All grapes used must be 100% organic and harvested strictly by hand. Furthermore, the entire production and vinification process must take place at the producer's own winery—ensuring complete quality control from the vineyard to the glass bottle.
This sparkling wine is always produced using the traditional method (with secondary fermentation in the bottle) and is aged on the lees for at least 18 months, with many prestigious bottles spending 30, 60, or even more months in the cellars. The production is dominated by historical, local Penedès grape varieties: Xarel·lo, Macabeo, and Parellada, which provide the beverage with complexity, longevity, and a distinct sense of terroir.
Due to its long aging on the lees, this sparkling wine features a firm structure, creamy bubbles, and perfectly integrated acidity, making it a fantastic food companion.

Unlike lighter sparkling wines, a long-aged Corpinnat (especially vintage bottles) has enough body and complexity to withstand heavier dishes. It pairs flawlessly with roasted poultry, fattier white fish, or even creamy risotto dishes.
Although both beverages are produced in the same region from similar grapes, Corpinnat producers separated from the Cava appellation to create a distinct, prestigious category. The main differences: Corpinnat requires 100% organic farming, manual harvesting, vinification entirely on the estate, and a much longer minimum aging period (18 months instead of the 9 months required for Cava).
To reveal the subtle aging aromas (toast, brioche, nuts) as well as the fruity notes, the beverage is best served chilled to 8–10°C. We recommend avoiding very narrow flute glasses—wider, tulip-shaped sparkling wine or even white wine glasses are a much better fit.
