Sarpa di Poli is a young grappa made from the pomace of ‘Merlot’ and ‘Cabernet’ grapes, reflecting the classic, authentic style of this Italian spirit. It is a distillate in which the traditional identity of grappa is preserved without the coarse flaws often associated with old-fashioned versions – without excessive sharpness, heaviness, or an oily impression. The name “Sarpa” means grape marc in the Venetian dialect, the very raw material from which grappa is made, so the name itself highlights its origin, simplicity, and connection to local tradition.

The idea of Sarpa di Poli was born in 1983 as an ambition to create a grappa that would serve as a bridge between the past and the future: preserving the traditional aromas of grappa while making them cleaner, more precise, and more elegant. In search of the most suitable raw material, Jacopo Poli chose the classic Bordeaux blend varieties – ‘Cabernet’ and ‘Merlot’ – which have long been cultivated in Veneto and are particularly well suited to producing a grappa that is both characterful and harmonious. This grappa is artisanally distilled in small batches using a discontinuous copper still with steam pots. This method allows the spirit to retain its authentic character while giving it clarity and precision.

On the nose, Sarpa di Poli reveals notes of red grapes and berries, complemented by herbal freshness and hints of red flowers. Aromas of freshly cut grass, echoes of wine, and nuances of geranium, rose, and violet can all be perceived. On the palate, the grappa is firm, dry, and direct, yet not harsh – combining an authentic grappa character with fruitiness and a clear, well-defined structure. It is a classic young grappa in which the emphasis is not on the softness of ageing, but on the true, open identity of the distillate.

We recommend serving it at 10–15 °C in a tulip-shaped glass so that its aromatic profile can unfold with precision while preserving its fresh, herbal character.
