Fermentation with the skins is very important in the production of red wine and gives it its characteristic ruby, cherry and violet colour and its astringent tactile sensation, described as tannininess. Depending on the winemaker's idea, the red wine may be aged in oak barrels, which may be new, second-hand, smaller or larger, depending on the style of wine to be produced. The length and conditions of ageing determine the final style of the red wine - longer ageing softens the tannins and gives the wine more balance and complex aromas.
The style of a red wine is influenced by the grape variety, the climatic conditions, the soil and the winemaking methods. However, the quality is determined by the skill of the winemaker.
