Raudonasis sausas
From ancient soils and deep roots in the hearth of the DOC Primitivo di Manduria, it comes a wine ready to show us its purest essence. An unusual and limited selection, with a dry and incredibly robust style.
Grapes are hand-harvested, then destemming and pressing. The maceration period lasts 15 days, followed by an alcoholic fermentation. On the nose is wide, surprising, with notes ranging from blackberry and red berried fruit to carob, licorice and blond tobacco, up to cocoa. In the mouth it is dry, enveloping, balanced, rightly tannic, robust and wth an extremely long aftertaste. The wine was aged for 6 months in French oak barrels.
Serve at 16-18 °C with roast beef, game stew and aged cheeses.
In a middle earth, between the sea of Taranto and the Itria Valley’s hills, is located San Giorgio, a small village part of the Primitivo di Manduria DOC region, where we have handed down traditions, experience and passion for wine for four generations.
Giustini is led by Giuseppe Papadopoli together with his sons Salvatore and Federico. Giuseppe founded the company in 2005 and applies all his knowledge to grow grapes of the highest quality in his vineyards; Salvatore is a young and passionate winemaker with the desire to experiment and extract the best juice from his father’s work. Federico, on the other hand, is the cellar master: his eyes and arms guaranteeing all daily operations.
