Rich, plush, silky-textured wine with layers of ripe, sweet, fresh, juicy, dark red fruits, licorice, earth, smoke and espresso notes. Full-bodied, concentrated and with a round, luscious, fruit-filled finish with ripe, fresh, plums, cherries, thyme, cocoa and crushed rocks in the endnote. The wine is a blend of 60% Merlot and 40% Cabernet Franc.
Serve at 16-18 °C with all types of classic meat dishes, veal, pork, beef, lamb, duck, game, roast chicken, roasted braised, and grilled dishes.
Pepper, bay and roasted tobacco notes give this a distinct persona out of the gate, while sous bois and mulled plum, black currant and black cherry fruit flavors fill in behind. Singed juniper and alder hints add form through the finish. Serious kudos for its range and character, but may be a touch too old school for some folks. Merlot, Cabernet Franc and Cabernet Sauvignon. At the estate, the harvest is carried out by hand, and each parcel is assessed individually to ensure that grapes are picked at their optimal moment of ripeness. In the winemaking process, traditional fermentation methods are combined with modern technological control, allowing maximum preservation of fruit purity and structural balance.
After fermentation, the wines are aged in French oak barrels, a portion of which are new. The duration of ageing and attention to detail provide the wines with complexity, softness, and strong ageing potential. La Gaffelière wines display clear structure, a refined aromatic profile, balanced fruit expression, and elegance that reveals itself both in youth and after extended maturation.
