It is dry wine made by the ancestral method. The wine has a complex and pleasant aroma with hints of red berries and herbs. The taste is bright, fresh and rich. According to this method, the wine is bottled in the middle of fermentation, and the bottles are usually closed with beer caps. Thus, the fermentation of carbon dioxide in the wine continues along with the yeast fermentation. And the wine itself does not need the addition of sulfur, because it remains stable thanks to the carbon dioxide contained in it. In addition, it is worth drinking while young.
Serve at 7-9 °C with almost any dish, for example, lemon tart or strawberry pie and tastes great on its own.
Biologist Craft Winery was founded in 2019 by famous Ukranian wine expert Igor Petrenko. On a small farm of 14 hectares in Odessa region and a few hectares near Kiev, Biologist does biodynamic viticulture, with a modern approach to winemaking without use of any artificial chemicals, such as herbicides and pesticides. The gravitational principle of technological process and constant generation of new ideas allowed Biologist to make wine production an art. The winery works with local and international grape varieties like Pinot Noir, Merlot, Cabernet Sauvignon, Odessa Black, Rkatsiteli, Chardonnay, Aligote. The south of Ukraine, where the largest areas of vineyards are located, is at a latitude that also extends between Bordeaux and Burgundy.
