Grapes are harvested in mid of September with high acidity and low sugar content. The first 100 tons for Sangiovese were pressed and vinified in barriques of French Allier oak for 10 months. Maturation in bottle with yeasts for 20 months. This dedication of selection of the free-run of the wine has always been polar star in distilling the Sangiovese essence for sparkling wine. Volpaia's sparkling wine is Brut Nature, without any dosage, it's a milesime produced only in the best vintages. It's the essence of the purest Sangiovese produced in a limited number of bottles.
Serve at 8-10 °C as an aperitif, with seafood or mushroom risotto.
