This wine is produced by one of the few Chablis estates that make all their wine exclusively from their own vineyards, never selling grapes or wine to négociants (wine merchants). This ensures impeccable consistency and quality. The grapes come from old vines grown on a specific soil mix that gives the wine its characteristic "steely" and flinty edge, for which Chablis is so famous. The "Vaillons" Premier Cru plot, from which the grapes are sourced, spans 2.5 hectares and includes vineyards like Vaillons proper, Roncières, Séchet, Châtains, and Epinottes.
