This unique cuvée is a blend from three prestigious vineyards on the Corton hill: 60% Les Paulands, 20% Les Perrières, and 20% Clos du Roi. These vineyards contribute to a complex yet harmonious expression. Aged in French oak barrels (though Ponsot famously uses very old, neutral oak to respect the fruit), the wine gains subtle structure without masking its innate freshness. The combination of renowned Grand Cru plots and precise winemaking results in a powerful yet refined wine, characteristic of the esteemed Corton hill.
Serve at 15-17 °C with beef short ribs with roquefort sauce or comte or gruyere cheese.

Compared to many other wineries in the region, the best vineyards of Domaine Ponsot are of particularly old origin, giving the wines exceptional depth and complexity. Although the winery does not loudly declare its methods and is not certified, ecological and biodynamic viticulture principles are applied on the estate, emphasizing respect for nature and the expression of terroir.
