Mezcal

Mezcal is a traditional Mexican alcoholic drink made from agave. Traditionally, mezcal is produced in the southern regions of Mexico, including Oaxaca, Durango and Guerrero. Like tequila, Mezcal is a distilled beverage, but the production process differs. Unlike tequila, mezcal can be made from different types of agave (e.g. Espadin, Tobala), the kernels of which (called piñas) are baked in underground ovens before distillation. This gives the drink a smoky and earthy flavour profile. Mezcal is also characterised by herbal, spicy and floral aromas, which are the result of the different types of agave or region. During the maturation process, mezcal can also take on woody aromas. According to maturity, mezcal is classified as 'Joven' ('Blanco'), which is unaged, bottled immediately after distillation; 'Reposado', which is aged in wooden barrels for between 2 and 12 months; or 'Añejo', which is aged for more than a year. Mezcal is not only a part of Mexican culture, but also a popular alcoholic beverage worldwide and increasingly used in cocktail making
