Attached to its heritage, Antech still practices the long, complex ancestral process. The result — a sweet, fruity sensation combined with a low alcohol content. Exclusively manual harvest of Mauzac almost overripe.The musts ferment until obtaining 5° of alcohol. The prize de mousse or 2nd fermentation takes place according to the Ancestral Method without adding sugar and only thanks to residual sugars from the 1st fermentation. It takes place during a few weeks. It is said that the wine takes bubbles and reaches finally 6/7° of alcohol. This Cuvée offers a unique taste of the terroir.Straw yellow color. The attack in palate is crisp with the toothy bite of apple and grape. The scents of honey and acacia and very ripe pear bring the sweetness.
Serve at 5-7 °C with apples, pancakes, fruit tarts and galette des rois.
