Pet-Nat ('Pétillant Naturel') is a drink preserved in the ancient technique of sparkling wine production, which has recently been rediscovered in the natural wine movement. This wine is produced using the 'méthode ancestrale' method, whereby the wine is fermented only once, directly in the bottle, without removing the yeast.
As a result, pet-nat wines often contain lees and can have flavours and aromas that are uniquely complex and distinctive. These wines are lighter and livelier, with a pronounced aroma of yeast, flint and smoke.
Pet-Nat wines are made from a wide range of grape varieties, including 'Pinot Gris', 'Gewurztraminer', 'Muscat', 'Pinot Noir', 'Chardonnay' and others. Its colour can vary from pale yellow to pink or even red, depending on the grape varieties used and the method of production.
Pet-Nat bottles are usually sealed with a metal crown stopper rather than the traditional Champagne mushroom stopper, thus preserving the spirit of the old technique.
The style of this wine is shaped by the grape variety, the climatic conditions, the soil and the winemaking methods. However, the final taste is determined by the creativity and skill of the winemaker.
