Classic granite profile of the Northern Rhône, on the northern bank of the Ouvèze in Ardèche. Syrah from 70+ year old vines, locally called «Serine» but perhaps an ancestor of this grape.Whole-cluster maceration for 6 to 8 days. Fermented by indigenous yeasts in demi-muids. Aged in demi-muids on fine lees for 18 months. No sulfur added. Manual bottling.

Serving recommendations

Serve at 16-18 °C with both rustic and sophisticated dishes, stews, braises, and grilled meats, dark fish and tomato-based dishes such as ratatouille.
