Pinot Noir, Cabernet Sauvignon and Merlot grapes manually harvested from one hectare plot in Bolhrad, Odessa region. Three days of cold maceration ensure a distinct aromatic profile. Fermentation with native yeasts takes place in oak barrels (225l) and the wine is aged for 12 months. This cuvee has extensive aromas of dried cherry, blackcurrant and plum. Well balanced palate with plum and tobaco notes and long finish.
Serve at 16-18 °C with roasted meat, duck and aged cheeses.
Biologist Craft Winery was founded in 2019 by famous Ukranian wine expert Igor Petrenko. On a small farm of 14 hectares in Odessa region and a few hectares near Kiev, Biologist does biodynamic viticulture, with a modern approach to winemaking without use of any artificial chemicals, such as herbicides and pesticides. The gravitational principle of technological process and constant generation of new ideas allowed Biologist to make wine production an art. The winery works with local and international grape varieties like Pinot Noir, Merlot, Cabernet Sauvignon, Odessa Black, Rkatsiteli, Chardonnay, Aligote. The south of Ukraine, where the largest areas of vineyards are located, is at a latitude that also extends between Bordeaux and Burgundy.
