The wine is made from indigeneus grape variety Odessa Black. It is a cross between Alicante Bouchet and Cabernet Sauvignon developed in Ukraine in the 1950s. The grapes are harvested by hand. Ten days of whole bunches cold maceration gives intensive ruby color. Fermentation takes place in stainless steel with 50% of cultured and 50% of native yeasts. Malolactic fermentation goes in oak barrels and then the wine is aged for 9 months. Pronounced aromas of cherry, violet and bluberries. Lush and juicy palate with touch of oak, plum, spices completes elegant finish.

Serving recommendations

Serve at 16-18 °C with gilled meat, duck and vegetable stew.

Biologist Craft Winery was founded in 2019 by famous Ukranian wine expert Igor Petrenko. On a small farm of 14 hectares in Odessa region and a few hectares near Kiev, Biologist does biodynamic viticulture, with a modern approach to winemaking without use of any artificial chemicals, such as herbicides and pesticides. The gravitational principle of technological process and constant generation of new ideas allowed Biologist to make wine production an art. The winery works with local and international grape varieties like Pinot Noir, Merlot, Cabernet Sauvignon, Odessa Black, Rkatsiteli, Chardonnay, Aligote. The south of Ukraine, where the largest areas of vineyards are located, is at a latitude that also extends between Bordeaux and Burgundy.
