Old vines are over 35 years and produce an exceptionally intense and aromatic wine that reflects the unique character of its terroir. With its pale, clear ruby red hue, it reveals notes of black fruits and excellent strength and concentration. As with all Gevrey-Chambertin, it requires a few years of patience before reaching its full potential.
Serve at 14-16 °C with beef bourguignon or a platter of mature cheeses
The ripe, plummy fruit character is a bit restrained on the nose but opens up on the palate with notes of earth, mineral, and smoke. The texture is classic for Gevrey in a cool year, with reasonably strict tannins and fresh acidity that lead to a persistent finish. This wine is a selection from the 35 parcels that Faiveley owns in Gevrey.
This self-confidently dry and well-structured Gevrey-Chambertin has pronounced earthy and savory notes with a hint of soy sauce. It really benefits from some aeration in the glass, the delicate red fruits opening up nicely. Try to be patient, because even just one more year in the bottle will really help this prototypical expression of the appellation.
