Elástico is wine made from a single vineyard planted 80 years ago. It is a high site, over 800m above sea level, with calcareous soil. The harvest is handpicked. After 20 hours of maceration, fermentation took place in concrete tanks. The wine was then stored for 1 year on its lees in concrete tanks. In one of the tanks, malolactic fermentation was inadvertently carried out, something that winemakers are constantly trying to avoid. This was a happy accident which added an extra textural element to this concentrated, mineral wine. It has a soft texture, weighty but fresh enough.
Only 3500 bottles were produced.
Serve at 10-12 °C with white fish, poultry, soft cheese.
The new white 2020 Elástico was produced with a Macabeo field blend from an 80+-year-old, dry-farmed vineyard at 800 meters in altitude in conversion to organic in 2022. The juice fermented in concrete with indigenous yeasts after a 20-hour maceration with the skins and matured in underground concrete vats with the fine lees and no bâtonnage for 12 months. It has only 12.5% alcohol, a pH of 3.26 and 6.44 grams of acidity (measured in tartaric acid per liter of wine). This is really a field blend with many varieties—Palomino, Robal/Jaén, Garnacha Blanca and perhaps 50% Macabeo. The wine comes through as more Burgundian; it probably went through partial malolactic (which is something they do not want for their whites), and that gives it a little creaminess and makes it textured. There's freshness but also weight. 3,500 bottles produced. It was bottled in April 2022. It's sold without appellation of origin as varietal wine. (LG) Inner quote mark (5/2023)
Bodegas Frontonio was created in 2008 by three friends from Aragón, Fernando Mora, aspirant Master of Wine, Mario López, oenologist from Bodegas Borsao, and Francisco Latasa, lawyer and international trade expert. The aim of Bodegas Frontonio is to dignify the area of Valdejalón and its vineyards, mainly planted with old Grenache, and with a continental-Mediterranean climate. In total, they directly manage around 50 hectares, with organic certification since 2017. Most part of the vineyards are located in the surroundings of Épila. They have different ages, exposures, altitudes and soil types. The climate is continental-Mediterranean with scarce rainfall (200-500 l/m2/year), 300 hours of sun per year, and days with a lot of wind, also called "Cierzo". Currently, Bodegas Frontonio makes garage wines in the back room of a small winery of bulk wines. They process takes place with minimum intervention, plot by plot. As a result, we can find excellent wines, authentic and with a lot of character.
