Baltasis sausas
he Vieilles Vignes wine comes from different parcels of 70 to 95 years of age planted on red and white clay soils, sometimes with limestone subsoil outcropping in stony forms. The venerable age of its plots conveys a great concentration and complexity to this gastronomic wine, present on many tables, including the most prestigious. Vinification and ageing are traditional in oak barrels with indigenous yeasts and bacteria, for a period of 20 months.
Serve at 10-12 °C with fish or shellfish, mature goat cheese.
The Domaine was founded in 1956 by André Bonhomme and his wife Gisèle. The surface was then 4 ha of Macon Viré, the appellation of the time, coming from his father Joseph Bonhomme. Today, André Bonhomme handed over to his son-in-law Eric Palthey and his daughter Jacqueline, both joined by their sons Aurélien and Johan. The estate carries out its activity in organic viticulture on some 14 ha located on the clay-limestone soils of the communes of Viré and Clessé for a production exclusively in bottles of 98% white wines and 2% reds.We find in white the Chardonnay grape variety and in red the Gamay.
