The grapes have been hand-picked from the best vineyard parcels and placed in small, vine leaf-coated bins. The grapes are laid out for a few months on straw mats in the “appassitoio” (drying room). They are then softly pressed and the must is transferred in “caratelli” (50-liter oak casks) for a slow, natural fermentation with the aid of an indigenous yeast known as “madre”. Amber in colour; the bouquet is very intense, persistent and complex, with endless layers of dried fruit, rose petals, tea leaves, exotic spices and vanilla. Its taste is full-bodied, sweet, persistent and thoroughly unique.

Serve at 14-16 °C with dried fruit or desserts.

Complex nose, with toffee apple, raisins and sultanas on a rich mineral underlay. Full-bodied, sweet and superdense, this sticks to your palate and the mineral finish goes on and on, getting saltier by the minute. Pure brown sugar and maple syrup.

Named after the original founders of the estate, the Avignonesi family, the winery has undergone an exciting journey since it was first established. Acquired by Virginie Saverys in 2009, Avignonesi has grown in size and at the same time has become a leader in biodynamic viticulture in Italy. Since the acquisition and thanks to Virginie’s respect for the ecosystem, her staff and the final consumer, the winery has started producing and crafting organic wines that are truly authentic to their origins yet singular and unique. And in the best biodynamic approach of their wines receive minimal intervention in the cellar! Sustainability also plays a big part in the everyday life at Avignonesi.
