Baltasis sausas
The grapes come from a parcel which is roughly divided between 70-year old Mauzac bushvines, and young vines grafted from the Mauzac Conservatory’s collection of authentic, original stock of this historic grape variety. This means we have the most biodiverse selection of this variety that exists in commercial production. Fermented and aged in seasoned oak barrels. Grapes picked from one selected parcel of old bushvine Mauzac on the plateau of the terrace. Sorted by hand, gentle pneumatic pressing, only best free-run juice used. Occasional batonnage.
Serve at 12-14 °C with white meat or fish in creamy sauces, and most cheeses.
Jan and Caryl Panman travelled the world for work and pleasure before finding their bliss in Limoux. In 2001 they took the plunge and purchased the 22 hectare Château Rives-Blanques (named after one of the Pyrenean peaks on the horizon). Aided by Eric Vialade, who has run the estate for 30 years, and Pierre Roque, their consulting oenologist, they are making some of the purest, most mineral wines in the area. Now their children are taking a larger role, Jan-Ailbe as the winemaker-in-waiting, Xaxa on the commercial and promotional side.
