Putojantis sausas
Aged for 24 months on the lees, with less than 5 g/l residual sugar. Subtle notes of toast and butter, which is complimented by lemon, grapefruit and green apples. Bubbles are small and persistent. Clean, creamy with a long mineral aftertaste.
Serve at 6-8 °C with oysters, sea food or light fish dishes.
Subtle notes of dried lemon peel on this wine's nose hint at pithy depth. The bone-dry palate shows lovely concentration and exactly that citrus pithiness that was suggested on the nose. Fine, creamy bubbles add a sense of ease to this wine that is elegant, vivid and mouthwatering.
Jean-Christophe Bott is heir to the family tradition dating back to 1795, when his ancestor, Jean-Martin Geyl tended his vines and made his wine. Jean-Christophe Bott has been responsible for Domaine Bott-Geyl since 1993 and he converted the vineyards to be organic in 2000 and then biodynamic in 2002. In the vineyards he concentrates on low yields and in the cellars he oversees the vinification in the most natural and minimalist manner. The whole art is to bring together tradition and modernity, to perpetuate the vignoble for posterity and to protect its ecology.
