Sparkling wine dry
50% Oiry, Chouilly and Avize, 50% Aÿ Pinot Noir; fully fermented and aged in old 205-litre oak barrels; aged 4 years on lees; 4 g/L dosage.
Fermented and matured entirely in small, old barrels makes this an anomaly in the Hébrart style, yet upholding the DNA of the house and its Grand Cru terroirs. This is a spicy and characterful cuvée of pale-straw hue that accurately accomplishes its aspiration of expressing the two sides of the river, by confidently uniting the red berry fruit and fig depth of Aÿ Pinot Noir, the white peach definition of ripe northern Côte des Blancs Chardonnay, and the spicy, toasty, coffee bean complexity of well-handled old barrel fermentation. Oak is sensitively handled, making more of a contribution in creamy, seamless texture than in flavour or colour. The result has body, power and flesh, tempered by fine phenolic grip, well-integrated acidity and invisible dosage on a long finish.
Serve at 6-8 °C as an aperitif, with seafood, fish, soft cheese plate.
"The 2016 Brut Rive Gauche-Rive Droite Grand Cru is a blend of equal parts Pinot Noir and Chardonnay from parcels in A , Avize, Chouilly and Oiry. Airy and perfumed in the glass, the 2016 is a Champagne of understated elegance more than anything else. White flowers, pear, mint, chamomile and crushed rocks are beautifully lifted. Jean-Paul Hébrart took over the management of the Champagne Marc Hébrart estate from his father, Marc Hébrart, in 1997. The estate is located in the Vallée de la Marne subregion of Champagne. Marc Hébrart began producing champagne under his own name in 1964. Today, the family owns 14 hectares of vineyards spread across 65 plots in six villages: 1er Cru vineyards in Mareuil-sur-Aÿ, Avenay-Val-d'Or, and Bisseuil, as well as Grand Cru villages in Aÿ, Chouilly, and Oiry in the Côte des Blancs region.
The "Spécial Club Champagne" represents the highest classification level that grower-producers can achieve. Membership in this exclusive club requires strict adherence to rigorous quality standards, with an intensive, multi-stage inspection process that begins each year in early February. Marc Hébrart has been a member of Club Trésors de Champagne, also known as "Spécial Club," since 1985.
