If you seek a bone-dry, crisp, and mineral-driven taste, opt for the "Brut" or "Extra Brut" styles. The most popular choice, characterized by gentle fruitiness and a subtle hint of sweetness on the finish, is "Extra Dry". If you prefer sweeter drinks to accompany desserts, look for the "Dry" category of Prosecco.
Valdobbiadene DOCG is an unparalleled aperitif. Drier styles ("Brut") pair wonderfully with fresh fish, sushi, Parma ham, and soft cheeses. The "Extra Dry" perfectly balances mildly spicy Asian dishes, while the "Dry" version pairs well with fruit tarts and less sugary desserts.
DOCG (Denominazione di Origine Controllata e Garantita) is Italy's highest wine quality standard. In the Valdobbiadene DOCG zone, vineyards are located on extremely steep slopes, yields are lower, and everything is hand-harvested. This results in a much higher wine concentration, more delicate aromas, and a more elegant taste than mass-produced DOC wines grown on flatlands.
Prosecco Superiore is best served well chilled at 6–8 °C, using not overly narrow "tulip" shaped glasses to allow its delicate floral and fruity aromas to unfold fully.
