“8 Blumen” is an exceptional Swiss cheese made from unpasteurised cow’s milk in the Appenzell region. Matured for at least 90 days, the cheese is coated in a specially created blend of eight different flowers, giving it both a colourful appearance and a distinctive aromatic character.
As the cheese matures, the floral and herbal aromas gradually penetrate its interior. Its flavour combines rich milky notes with hints of meadow herbs and delicate flowers, followed by a pleasantly aromatic, lingering finish. The flower-covered rind is edible, allowing you to experience the full harmony of aromas created by the cheesemaker.
“8 Blumen” is ideal for a cheese board, where it will make an eye-catching centrepiece. It can also be enjoyed with fresh bread, nuts, mild honey or fruit preserves. This cheese pairs well with aromatic yet not overly full-bodied white wines, such as Pinot Gris or subtly oak-aged Chardonnay. Those who prefer red wine should choose a lighter, fresher Pinot Noir.
Ingredients: unpasteurised cow’s milk, salt, edible flowers (mallow, safflower, marigold, fenugreek, strawberry, rose, cornflower and dandelion blossoms).
