Bodegas Valdespino Viña Macharnudo Alto Barrel-Fermented Palomino 2025 is an exceptional white wine that reveals another face of Jerez. Although Bodegas Valdespino is famous worldwide for its sherries, this wine proves that the legendary Macharnudo Alto vineyard can also produce exceptional still white wines. The wine is made from 100% Palomino Fino grapes grown in the highest part of the historic Macharnudo Alto vineyard, on white albariza soils, which give the wine a pronounced minerality and unique character.
The grapes are harvested at night to preserve freshness, gently pressed, and fermentation takes place in old sherry oak barrels. After fermentation, the wine is aged on the lees for 6 months, then aged in barrels for about 2 more months. This method gives the wine a richer texture, while maintaining its freshness and terroir expression.
The aroma opens with notes of lime blossom, lemon peel, green apple and white peach, complemented by nuances of roasted almonds, brioche, chalk, soft vanilla and sea minerals. The wine is elegant and multi-layered - bright acidity combines with a creamy texture, subtle oak accents, pear, citrus, herbs and a slightly salty mineral aftertaste reminiscent of the Jerez albariza soils.
It is recommended to serve at a temperature of 10–12 °C. This is a gastronomic wine that goes well with grilled white fish, seafood, squid, paella, sushi, risotto, poultry and Mediterranean cuisine.
