The pride of this region is its ability to produce highly concentrated and complex wines. In the autumn, the morning mists generated by the Layon River, followed by sunny afternoons, create the perfect conditions for noble rot (Botrytis cinerea) to develop. The grapes naturally shrivel on the vine, losing water and concentrating their sugars and aromas. Coteaux du Layon wines are dominated by intense flavors of honey, quince, dried apricots, peaches, and acacia flowers.
Although it is a sweet wine, the high acidity inherent in the Chenin Blanc grape prevents it from becoming overly cloying. This opens up a wide range of pairing possibilities:
