The vineyards are situated at extremely high altitudes (often 700 to 1,000 meters above sea level), meaning the hot Sicilian days are followed by very cool nights. This significant diurnal temperature shift allows the berries to ripen slowly, retaining natural acidity and accumulating complex aromas. The black, mineral-rich volcanic soil, loaded with ash, pumice, and basalt, imparts the signature salinity and structure to Etna Bianco wines.
According to appellation rules, Etna Bianco DOC wines must consist of at least 60% (and often up to 100%) Carricante grapes, which may be blended with Catarratto or Minnella.

To best reveal the wine's qualities and preserve its subtle smoky aromas, Etna Bianco is recommended to be served not too cold—ideally around 10–12 °C (50–54 °F).
