The name of the appellation translates to "star" in French. This comes from two sources: the five hills surrounding the village that form the shape of a star, and the unique limestone soil packed with tiny star-shaped marine fossils (pentacrines). It is precisely this soil that imparts an incredible, crisp, and slightly saline mineral texture to L'Étoile wines. Often crafted using a gentle oxidative method, the glass reveals not only apples and citrus but also complex aromas of walnuts, almonds, and dried fruits.

Are red wines produced in the L'Étoile appellation?
No. Under AOC regulations, the L'Étoile appellation is strictly reserved for white wines, as well as traditionally made Vin de Paille (straw wine) and Vin Jaune (yellow wine) styles.
At what temperature are the wine's best qualities revealed?
Because these wines possess a rich texture and a complex bouquet, they should not be over-chilled. The recommended serving temperature is around 11–13 °C.
