Sweet sweet
The sweet Cadillac is a wine obtained from the "noble rot" caused by Botrytis cinerea. Perched on generally steep slopes, the vines are exposed to the hot sun of the southern slope. Its calcareous and gravelly soils are particularly favorable to this delicious nectar called the sweet wine. The wine has a golden yellow colour that slowly develops over time to a shade of amber. Aromas are generally: fruity - apricot, citrus, floral - honeysuckle, honey, acacia, and spicy - vanilla. On the palate, sweetness of aroma and sugar content are balanced by the wine's acidity. The wine is suitable for aging.
Serve at 8-10 °C with blue cheese and goose liver pate, desserts or instead of it.
