Šis išskirtinis vynas gaminamas iš 80 metų senumo vynmedžių, augančių skurdžiame granitiniame dirvožemyje, Hermitage kalno viršūnėje, L'Ermite vietovėje.
100 % derliaus nuimamas ir brandinamas betoninėse talpyklose. Fermentacija trunka apie keturias savaites, todėl užtikrinami švelnūs ir kompleksiški taninai, tinkami ilgam brandinimui. Temperatūra niekada neviršija 32 °C, taip išgaunama aukščiausia kokybė.
Vynas tamsios granato raudonumo spalvos, beveik juodas. Nosyje atsiskleidžia juodieji vaisia, prieskoniai ir rašalo akcentai. Burnoje dominuoja galingas ir aksominis skonis. Dūmo ir pipirų poskonis, tik sustipriną šio išskirtinio vyno paletę.
Šį vyną galima brandinti nuo 30 iki 60 metų.
Tiekti 14–16°C temperatūros prie stirnienos/ jautienos file su raudonaisiais pipirais arba žvėrienos troškinio. Taip pat puikiai derės prie brandžių kietųjų sūrių.
