The only wine in the world made from 'Caberlot' grapes - a rare variety discovered in an abandoned Tuscan vineyard in the 1960s, which combines the characteristics of 'Cabernet Franc' and 'Merlot' grapes.
The winemaking is carried out with extreme precision: fermentation is carried out in 40 liter tanks, maintaining a low temperature and fermenting each day's harvest separately. An extremely low dose of sulfites is used to preserve the maximum naturalness of the wine.
After malolactic fermentation, the wine is aged for 22 months in French oak barrels - 60% of which are new. Tronçais, Allier and Vosges oak is used, which gives the wine a deep structural layering. The wine is bottled unfiltered and matures in the bottle for another 16 months.
Il Carnasciale Caberlot is a complex, deep red wine that combines notes of herbs, fresh red berries, dark chocolate, subtle vanilla, toffee and elegant oak.
This is an exceptional, small-production wine, appreciated by connoisseurs and wine collectors around the world.
Serve at 16 - 18 °C with game, beef steaks, stews or carpaccio seasoned with truffle oil, fried portobello mushrooms with parmesan cheese.

In the world of wine, few stories are as authentic and distinctive as that of Podere Il Carnasciale. Founded by the Rogosky family, the estate is nestled in the remote foothills of the Valdarno mountains in the Chianti region. Its history is inseparable from a truly unique grape variety – Caberlot.
The winery is lovingly and attentively managed by Beatina Rogosky and her son Moritz, working closely with long-time winemaker Peter Schilling.
A Unique Grape, a Unique Estate
Caberlot is the only grape of its kind in the world – genetically and in flavor profile it lies somewhere between Cabernet Franc and Merlot. Though the variety was discovered by chance, it has become a rare symbol of what nature and human respect for it can create.
The estate follows strict organic viticulture principles: no chemical fertilizers, herbicides, or pesticides are used. All vineyard work – from pruning to harvesting – is done entirely by hand. Each vineyard plot, and even each harvest day, is vinified separately, preserving the unique character of each micro-terroir. Only minimal amounts of added sulfites are used during winemaking.
