Sarpa Oro di Poli is an aged grappa made from the pomace of ‘Merlot’ and ‘Cabernet’ grapes, reflecting one of the most important stages in the evolution of this Italian spirit. It is a distillate in which the traditional origins of grappa meet a pursuit of maturity, precision, and elegance. The name “Sarpa” means grape marc in the Venetian dialect — the raw material from which grappa is born — so the name itself clearly points to its roots and identity.

Sarpa Oro was first created in 1991. It is artisanally distilled using a flowing-steam method and then patiently aged in the underground cellars of the Poli distillery. There, among thousands of 225-litre oak barriques, the grappa gradually develops a rounder structure, a warmer aromatic tone, and a more mature, focused character. This grappa beautifully illustrates how grappa evolved from a once simple, everyday spirit into one of Italy’s internationally recognised symbols.

On the nose, Sarpa Oro reveals notes of exotic fruit, accompanied by hints of vanilla, almonds, and toasted hazelnuts. The bouquet is warm and generous, yet retains clarity and an elegant sense of balance. On the palate, the grappa is round, mature, and harmonious. The influence of oak is subtle — it does not overpower, but instead brings together fruitiness, nutty warmth, and a light vanilla softness into a seamless, long-lasting finish.

We recommend serving it at 18–20 °C in a tulip-shaped glass so that its aromatic profile can unfold with precision and depth.
