Although some artisans attempt to make dry versions, the true calling of Sary-Pandas is revealed in sweet or fortified (liqueur) wines. Due to the thick berry skins and hot climate, the grapes are often left to shrivel on the vine. The resulting wines surprise with highly complex aromas of dried apricots, wildflower honey, quince, and roasted nuts.
Sweet Sary-Pandas wines require specific gastronomy. They are ideal for slow sipping after dinner and pair wonderfully with intense blue mold cheeses (e.g., Roquefort or Gorgonzola). They also perfectly complement fruit desserts, caramelized nuts, and traditional honey cake.
Due to the extremely high natural sugar content and strong structure, dessert or fortified versions of this variety boast phenomenal longevity. A high-quality bottle can successfully age in the cellar for decades, acquiring an even darker amber color and deep aromas of resin, caramel, and dried figs over time.
Sary-Pandas is an autochthonous (indigenous) Crimean variety. In the 20th century, due to various political and agricultural changes (including mass uprooting of vineyards), many historic local varieties were lost. Today, only small plots of this variety remain, carefully tended by winemakers interested in heritage preservation.
