Description

The way Château Pavie is fermented depends on the vintage. It is kept on the skins for three weeks in 20 temperature-controlled wooden vats. Malolactic fermentation in barrel. The wine is aged, depending on the vintages in 70% to 100% new oak, for 18 - 32 months.

This is a perfumed ripe wine, packed with generous tannins that still give a style and elegance that is a remove from the older overripe style of Pavie. It is balanced, complex and with great potential. The wood and the tannins are in harmony with the black fruits. With its structure, it will certainly age well. Drink from 2027.

About brand

Château Pavie is one of the most renowned wine estates in the Saint-Émilion appellation of the Bordeaux region, whose name has become synonymous with the quality and intensity of modern right-bank wines. It is among the few estates classified as Premier Grand Cru Classé A, the highest rank in the Saint-Émilion classification, first awarded in 2012 and confirmed in 2022, distinguishing it among the elite names of Bordeaux.

The history of the estate dates back to Roman times, when vines were already planted on the slopes of Côte Pavie. It is one of the oldest documented vineyards in the Bordeaux region. The estate takes its name from the peach orchards that once grew nearby, and over time this site developed into one of the most important centers of winemaking in Saint-Émilion.

The modern history of Château Pavie began in the late 19th century, when Ferdinand Bouffard brought together several smaller properties into a single estate, which later became the foundation of the current vineyard structure. Throughout the 20th century the estate changed owners and styles, but a significant transformation in quality began only in 1998, when Gérard Perse acquired Château Pavie. The vineyards were replanted, soil management and vineyard practices were modernized, and winemaking was refocused toward an expressive and textural style.

Approximately 35–37 hectares of vineyards are located on the slopes of Saint-Émilion around Côte Pavie and are planted with classic right-bank Bordeaux varieties: ‘Merlot’, ‘Cabernet Franc’, and ‘Cabernet Sauvignon’. Together they give the wines a rich aromatic spectrum, depth of texture, and significant ageing potential.

Château Pavie wines are valued not only for their technical quality, but also for their ability to express the unique character of Saint-Émilion terroir – a combination of clay and limestone soils, south-facing slopes, and optimal climatic conditions. The result is wines capable of ageing for decades.
