Red wine – 100% ‘Cabernet Franc’
This is an elegant and authentic red wine, reflecting the distinct identity of this renowned Loire Valley estate. This cuvée is a pure expression of the ‘Cabernet Franc’ grape’s potential – a wine full of freshness, minerality, and the charm of the Loire terroir.
In the glass – a deep red color with purplish highlights. On the nose – aromas of ripe cherries, rosemary, sun-dried tomatoes, and subtle herbal notes. The palate is balanced and vibrant, with fresh acidity, young, energetic tannins, and a juicy finish revealing cherries, blueberries, geranium, and a gentle chalky minerality.
The grapes come from 30–35-year-old vines growing in soils with layers of sand and clay-limestone. The grapes are fermented with native yeasts, followed by up to 15 months of ageing in concrete vats.
Le Domaine is an authentic, structured, and expressive red wine, combining tradition with the winemaker’s craftsmanship. Made with respect for the Chinon terroir, it is a must for those seeking elegant and characterful wines.
Serve at 14-16 °C with beef tartare, turkey and vegetable stew, roasted pork belly, wild game, and goat cheese.
Bernard Baudry, son of a winemakers’ family, started his professional life as a vine-tending consultant at the Tours laboratory, where he worked with Jacques Puisais. He had previously studied oenology in Beaune. His 5 years on the job served as an excellent apprenticeship when in 1975 he decided to start his own estate with 2 hectares of vines. His son Matthieu studied in the Mâcon area, then in Bordeaux, and, after a year working in Tasmania and California, joined his father in 2000. Domain now has 32 hectares of vineyards spread across the AOC Chinon, in Cravant les Coteaux and Chinon.The grape is grown primarily 90% Cabernet Franc (90%) plus a small production of Chenin Blanc. The vineyards are located on very varied terroirs of gravel in the plain, limestone clay on coteau and sandy limestones plateaus. This diversity offers us the possibility of applying piecemeal winemaking.
