Grapes grown in sandy and gravelly soils closer to the river yield lighter, highly fruity wines that mature quickly, offering aromas of red berries and violets. Meanwhile, the limestone (tuffeau) soils on the hillsides create much firmer, tannic wines suited for long-term aging.
These wines are excellent gastronomic companions. Lighter-style Chinon pairs perfectly with grilled poultry, pork, or even richer fish. More mature, structured wines demand heartier dishes: beef steaks, game, or hard cheeses.
Although about 90% of the region's production consists of red Cabernet Franc wines, they also produce a small amount of refreshing rosés and exceedingly rare, mineral-driven white wines from the Chenin Blanc grape.
Lighter-style wines are best consumed within 2–5 years. However, wines from top producers grown in limestone soil can age beautifully in a cellar for 10–20 years, developing notes of forest floor, tobacco, and leather.
