The Kingdom of Monastrell and Historic "Fondillón"

The scorching Mediterranean sun and poor soils provide ideal conditions for the thick-skinned Monastrell grape. The red wine produced from it is characterized by a full body and aromas of ripe blackberries, black plums, and sweet spices. The appellation's greatest pride is "Fondillón." This is a rare, historically king-favored naturally sweet wine, made from overripe Monastrell grapes left on the vine and aged in oak for a minimum of 10 years.

A Companion to Mediterranean Cuisine

Thanks to their sunny character, round tannins, and pronounced fruitiness, red Alicante wines are the perfect wine for meat. They pair wonderfully with traditional Spanish paella, roast pork, barbecue dishes, and spicy Mediterranean stews. The region's white wines (mostly from Moscatel) are refreshing and pair perfectly with fish or act as a great aperitif.

Is Fondillón a fortified (liqueur) wine?
No, and this is one of the most unique features of Fondillón. Unlike Port or Sherry, it is not fortified with added alcohol. All of its high alcohol content (around 16%) and sweetness are achieved naturally, due to a very late harvest and extended aging.

How long can Alicante red wines be cellared?
Basic wines are meant to be drunk young to enjoy their fruitiness. However, Crianza or Reserva level wines aged in oak barrels can evolve beautifully in the cellar for 5 to 8 years.

At what temperature should Monastrell wines be served?
Because these wines typically have a fairly high alcohol level, it is advisable to serve them slightly cooler, around 16–18 °C. If served too warm, the alcohol may feel overpowering and throw off the aromatic balance.
