The word Classico in the appellation indicates that the grapes were grown in the oldest, original Valpolicella zone, which boasts the finest microclimate. The production of Amarone requires immense patience and craftsmanship. In autumn, hand-harvested Corvina, Rondinella, and Molinara grapes are carefully selected and laid out to dry in well-ventilated lofts (a process known as appassimento). Over several winter months, the berries lose most of their water weight, drastically increasing their natural sugar and aromatic concentration. Only then are they pressed and fermented.
