The Oldest Sparkling Wine of France

History suggests that sparkling wine in the Limoux area was first produced back in 1531 by the monks of the Saint-Hilaire abbey—a full century before Champagne. This traditional method sparkling wine must contain at least 90% Mauzac grapes, which impart a very distinctive, slightly rustic fruitiness to the beverage. The remainder can be Chardonnay and Chenin Blanc, which add elegance and crispness.
